NO BAKE ENERGY BITES TO BEAT THE JANUARY BLUES

A lot of people feel down in January. For many, it feels like all the celebrations are over, it’s dark, cold and there is nothing to look forward to. If you need a little sweet treat to brighten up your day or you need a little pick me up to boost your energy in the afternoon, please don’t go after the processed junk food options with tons of unhealthy fats and refined sugar. Try making these delicious bites and you can save them in your refrigerator for up to two weeks. You get your sweet treat with fiber, protein, vitamins A, B & E, magnesium and iron. It only takes 5 minutes to make these beauties. Enjoy!

INGREDIENTS:

  • 1/2 cup almonds
  • 1/2 cup pecans
  • 6 pitted medjool dates
  • Turkish apricots
  • 1 teaspoon virgin coconut oil 
  • 1 tablespoon almond butter
  • 1 tablespoon vanilla extract
  • 1 teaspoon kosher sea salt
  • 2 teaspoon ground cinnamon 
  • 1 teaspoon ground cardamom 

 

TOPPINGS: Ground or slivered pistachios and lavender buds.

 

DIRECTION: 

Place the the almonds, pecans, cinnamon, cardamom and sea salt into a food processor and pulse until fully crushed before forming into a butter texture. Add the dates, apricots, coconut oil, almond butter, vanilla extract and pulse until you get a sticky mixture. Take a tablespoon of the mixture, roll into small balls and cover with your favorite topping. Place the ready balls into the freezer for about 30 minutes for a firm texture. Remove and store in an airtight container in the refrigerator.

NOTE: Makes about 20-22 bites depending on the size.
